  • Tradition Royal caviar is obtained from white sturgeon, a species native to the Pacific Ocean and distributed from Alaska to Baja California. It is among the longest-lived sturgeons, it can reach one hundred years of age, weigh 800 kg and up to 6 m in length. In addition to its lean meat with a high protein content, it is particularly prized for its conspicuous production of large eggs, from 2.8 to 3.2 millimetres, characterized by a color that varies from dark gray to black.
    The taste of its caviar is perfectly balanced and round, recalling the sea only in its most delicate components. With delicious notes typical of the pastry world, it meets the most demanding palate of every age and culture.
    A caviar to be appreciated strictly in purity and as the start of an exhilarating tasting of different types of caviar. Recommended pairing with brut or saten bubbles.
    It takes about 14-15 years to obtain this caviar.
