How to Store Fresh Truffles
There are several ways to store truffles:

Refrigerator: it is recommended not to wash the truffle before placing it in the fridge, as the layer of soil covering it helps preserve it from faster spoilage. Wrap each truffle individually in paper towels and place it in an airtight container, changing the paper daily. You can store white truffles in the refrigerator for up to 7 days, and black truffles for up to 10 days.
Tip: place some raw eggs in the airtight container with the truffle; after at least 24 hours, the eggs will naturally absorb the truffle’s aroma.
Curiosity: contrary to popular belief, storing truffles in a jar full of rice is strongly discouraged, as rice tends to dry out the truffle, making it hard.
Before use: before enjoying the truffle, clean it well to remove all traces of soil. Rinse it under cold running water with a small brush, taking care not to use too much force. If the soil layer is too thick, soak the truffle in cold water for a few minutes to soften it, making it easier to brush off. Pat it dry with a paper towel to remove excess water, and let it rest at room temperature for about 20 minutes to allow it to dry completely.
