HOW TO STORE FRESH TRUFFLE
Truffle is a precious and delicate product, a gift of the earth, requiring special care to preserve its unique aroma. To store it properly, wrap each truffle individually in absorbent paper and place it in an airtight container in the refrigerator, replacing the paper daily. White truffles can be kept for about 7/10 days, black truffles for up to 10/15 days, but remember: the sooner you enjoy them, the more intense the aroma.
Curiosity: Contrary to common belief, storing truffles in rice is not recommended, as it tends to dry them out.
DELICIOUS TIPS
A little secret to enhance truffle aroma is to place fresh eggs in the same container with the truffle. After at least 24 hours, the eggs will naturally absorb the aroma, becoming perfect for omelets or fried eggs. This method also works with soft or semi-aged cheeses, such as robiola, young toma, or brie, which will acquire an extraordinary and unique fragrance.
HOW TO CLEAN TRUFFLES
Before enjoying, truffles should be cleaned gently. Rinse under cold running water using a soft-bristled brush to remove any dirt. If the outer layer is thick, soak it for a few minutes in cold water to soften the soil. Pat dry with absorbent paper and let it air dry at room temperature for about 20 minutes before slicing.
HOW TO SLICE TRUFFLES
Truffles release their full aroma in very thin slices. For the best flavor, use a adjustable truffle slicer. Do not use mandolines or knives, which produce slices that are too thick or uneven.

White Truffle
Best enjoyed raw, on hot or cold dishes. Perfect with eggs, fondue, buttered tajarin, finely minced beef, or delicate fillets. Also pairs well with dairy and neutral flavors. For a surprising twist, try it on vanilla ice cream or panna cotta.
Black Truffle
With a more delicate and earthy aroma, black truffles shine on hot dishes, which enhance their scent. Ideal with eggs, tajarin, risottos, fondue, and fillet steaks.
